The kombucha brewer has a very significant role at Alive Kombucha. They will be involved in many aspects of the kombucha making process including product development, sourcing of raw materials, brewing kombucha, shipping kombucha, cleaning brewing facility, meeting customers, and marketing kombucha.

Alive Kombucha is the first industrial kombucha brewery in New Brunswick and also the only one in the world to do it with solar energy through a zero-carbon footprint facility.

Essential functions, requirements, and responsibilities:

  • Product development
    They will work in conjunction with management, brewery owners and the marketing team to develop interesting and unique products that consumers will enjoy. This will involve creating recipes and brewing small batches for testing. The kombucha must be designed to not only taste great, but to satisfy consumer demand in the market. Maintain fermentation schedule and monitor kombucha throughout the fermentation. Brew current recipes and maintain brew records.
  • Sourcing raw materials and dealing with suppliers
    The kombucha brewer is responsible for sourcing high quality raw materials required for the brewing process. They must determine if the raw materials are of sufficient quality for the kombucha being produced. The brewer will also ensure they are being stock piled correctly and that there is sufficient inventory available for the current kombucha production rate.
  • Brewhouse operations
    The key responsibility of the kombucha brewer is to oversee the brewing process. They will ensure the brew recipe is being followed accordingly and accurately and the kombucha is stored correctly. They often direct other staff to ensure brewhouse operations are being performed adequately.
  • Equipment maintenance
    They must maintain equipment within the brewery. They will create a maintenance schedule which works well with production requirements.
  • Quality control
    The kombucha brewer must assess the quality of the brew throughout the brewing process. They will be responsible for both scientific and taste-testing of the brew.
  • Production record keeping
    Detailed records must be kept, for food safety, kombucha quality and production processes.
  • Maintain safety and hygiene standards throughout the brewery
    The kombucha brewer must ensure that work is performed in a safe manner and strict hygiene standards are maintained.
  • Represent the company at trade events and liaise with customers
    Typically, a kombucha brewer will have a fair amount of interaction with customers and members of the public at tastings and trade shows. Ideally, they should be great communicators who can promote the kombucha being produced and the brewery itself.
  • Manage bottling and delivery processes
    The kombucha brewer will be involved with the bottling and help with the delivery for the finished product.
  • Brewery improvements
    The kombucha brewer must create a plan for improving the brewing and setting up goals for improving the productivity, hygiene, and safety of the brewery.
  • Brewery cleaning and maintenance
    The kombucha brewer will be responsible of the cleaning of the brew facility and maintaining the cleaning schedule records.

Kombucha Brewer Education:

  • Chemistry or Chemical Engineering degree
  • Microbiology degree
  • Food science or food technology degree
  • Kombucha Brewing course
  • Beer brewing course
  • Food safety course (HACCP operator, Food handling course etc.)
  • WHMIS

Kombucha Brewer Work Experience

A kombucha brewer needs to have a minimum of 2 years' experience working as a brewer and/or a beverage production worker. Ideally, they will also have experience with:

  • Brewery equipment maintenance
  • Industrial cleaning
  • Managing staff
  • Developing kombucha recipes
  • Record keeping
  • Quality control
  • Project management
  • HACCP or other food safety standards
  • Laboratory equipment handling and maintenance

Attributes:

  • High level written and verbal communication skills
  • Leadership skills, managerial skills and the ability to work with minimum supervision
  • A passion for kombucha making and developing new products
  • Very high level brewing skills
  • Physically fit and able to lift weights of up to 25 kilograms
  • Personable and able to communicate well with customers
  • Problem solving skills
  • Some mechanical knowledge and familiarity with brewing components
  • Innovative, creative and motivated to create some new and delicious kombucha products
  • Quality assurance skills and drive for continual improvement
